This is similar to a traditional Mississippi roast, but I like it better ūüôā I used sliced banana peppers instead of pepperoncinis, but you could also use those! I pair this with my¬†Zucchini Pasta with Avocado Pesto¬†for a nutrient dense meal packed with healthy fats, protein, and veggies!

Slow Cooker Chuck Roast


  1. 2-3 lb Roast
  2. 1-2 Tbsp Olive Oil
  3. 5-6 Garlic cloves, sliced or whole
  4. ¬Ĺ jar banana peppers with juice
  5. 2 tsp salt
  6. 4 tbsp parsley
  7. 3 tsp dill weed
  8. 2 tsp dried chives
  9. 4 tsp garlic powder
  10. 4 tsp onion powder
  11. 4 tsp dried onion flakes
  12. 2 tsp black pepper


  1. Brown both sides of roast in olive oil for 2 min each side. Place in slow cooker
  2. and add the rest of the ingredients on top. Cook for 4-6 hours until meat falls apart. Serve with slices of banana peppers and/or giardiniera.
