Fall is officially upon us…which means tis the season for soup! This is a copycat of Olive Garden’s Zuppa Toscana soup. A savory soup with a ton of flavor, and spice if you like, perfect on a cold day!
If you can, use homemade chicken broth as the base for the added health benefits! When I first heard about the health benefits of bone broth, my initial reaction was yuck! But after making it for the first time this week, it gave the soup an amazing flavor, MUCH BETTER than the store-bought broth.
Olive Garden is famous for their Zuppa Toscana soup which is awesome, but full of calories. So, of course, I’ve created a healthier, more nutritious version that it still just as yummy! !
This Zuppa Toscana soup is extremely satisfying and comforting. Easy to make in the crockpot with little work.
Other suggested ingredients: bacon pieces, potatoes or even better, turnips. Adding bacon? Cook bacon until crispy and then dice. Adding potatoes or turnips? Clean, peel, and cube.
It is important that the coconut cream is added at the end. The coconut milk should be refrigerated and you only want to use the solid white cream. Add the cream in, stir it into the soup a bit so it melts and you’ve got creamy soup!
