Craving Chinese? Thai? or just something with a bit of spice and tang? This is the perfect recipe, filled with quality veggies and good, unprocessed carbs.

Feel free to also adjust the honey lemon sauce to be sweet, tangy and/or spicy. Everyone has different preferences… so, once you have made the actual sauce, feel free to add in extra lemon juice or honey {and Sriracha if you’re like me :)} to taste.

This is a very diverse dish so depending on what you have on hand or what you might be craving, you can serve it over another grain, rice, vegetables, noodles, in a salad, or however you prefer!

    1. 1.5 pounds Organic Chicken Breasts, cut into bite-sized pieces
    2. 3 tablespoons Gluten-Free Soy Sauce
    3. 2 tablespoons Red Wine Vinegar
    4. 1 tablespoon Olive Oil
    5. 1 head of Broccoli, chopped
    6. 1 white Onion, diced
    7. 2 cloves Garlic, minced
    8. 1 cup uncooked Quinoa
    9. Honey Lemon Sauce (see below)
    10. Salt and Pepper
    11. Optional toppings: Toasted Sesame Seeds, thinly-sliced Green Onions, extra Lemon Zest, Lemon Slices, or diced Jalapeños
    13. ¾ cup Chicken Stock
    14. ¼ cup Fresh Lemon Juice
    15. 3 tablespoons Honey (or more/less to taste)
    16. 2 tablespoons Arrowroot Powder
    17. Zest of 1 Lemon
    18. Pinch of ground ginger
Optional: drizzle Sriracha on top

  1. Combine the chicken, soy sauce and red wine vinegar to a large ziplock bag, and toss until the chicken is evenly coated. Refrigerate for at least 10 minutes, or up to 8 hours.
  2. Heat oil in a large saute pan over medium-high heat.
  3. Saute onion, garlic in olive oil for 2-3 minutes. Add broccoli and cover with lid to steam until tender {if needed, add ¼ cup water to pan to team}. Set aside on clean plate.
  4. Remove the chicken from the ziplock bag and drain most of the marinade. Add the chicken to saute pan, and cook for 5-7 minutes or until it is cooked through and no longer pink inside. Stir and turn the chicken occasionally for even cooking.
  5. In a sauce pan, whisk the honey lemon sauce ingredients together until combined. Cook over medium-high heat for 2-3 minutes, or until the sauce reaches a low boil and thickens. Add in some Sriracha if you would like for extra heat, to taste. Feel free to also season with extra salt and pepper, or extra honey or lemon.
  6. Add the quinoa, broccoli mix, and honey lemon sauce to chicken and toss until it is evenly coated with the sauce. Remove from heat and serve the immediately, topped with optional toppings if desired.
