The recipe is heavily adopted from PhysicalKitcheness, but I have tweaked it a bit and I really like this recipe.
I eat this with a side salad or roasted veggies; but you could pair it with gluten-free bread as an open-faced sandwich, the russet potato as they recommend, or better yet on top of a sweet potato.
