Avocado, frsh cilantro, crumbled tortilla chips, sour cream, or cheese
Cook and shred or dice chicken.
Add chicken broth and water to crockpot.
Dice all veggies while chicken is cooking and add to crock pot.
Add seasoning and cook for 6-8 hours.
Optional - add olive oil to skillet and cook celery, carrots and onion for about 5 minutes. Then add diced garlic for about 1 minute. Add celery, carrot, onion, and 1 can of the tomatoes with 2 cups of water to food processor and blend until smooth for a smoother soup.
Top each bowl with prefered toppings and enjoy!
