Ingredients

    1. 3 cups chicken breast, shredded
    2. 4 cups of chicken broth - see how to make it here
    3. 2 cups water
    4. 1 can black beans, rinsed and drained
    5. 2 cans diced tomatoes and chilies
    6. 4 celery stalks, diced
    7. 4 large carrots, diced
    8. 1 onion, chopped
    9. 3 jalepenos, sliced
    10. 4 garlic cloves, minced
    11. 1 tsp chili powder
    12. 1 tsp garlic powder
    13. 1 tsp cumin
    14. 1/2 tsp cayenne
    15. 1/2 tsp pepper
    16. 1/2 tsp salt
Optional garnish:
  1. Avocado, frsh cilantro, crumbled tortilla chips, sour cream, or cheese

Instructions

  1. Cook and shred or dice chicken.
  2. Add chicken broth and water to crockpot.
  3. Dice all veggies while chicken is cooking and add to crock pot.
  4. Add seasoning and cook for 6-8 hours.
  5. Optional - add olive oil to skillet and cook celery, carrots and onion for about 5 minutes. Then add diced garlic for about 1 minute. Add celery, carrot, onion, and 1 can of the tomatoes with 2 cups of water to food processor and blend until smooth for a smoother soup.
  6. Top each bowl with prefered toppings and enjoy!
