I love veggies, but I like to make them several ways! This was a spontaneous add to the weekly menu as I was making cauliflower rice for stir fry this week and had some left over cauliflower rice 🙂

These are perfect for veggies on the go, and great for kids!

 

Prep Time: 10 minutes

Cook Time: 25 minutes

Total Time: 35 minutes

Yield: 30

Serving Size: 1

Calories per serving: 20: fat 1, carb 1, protein 1

Ingredients

  1. 1/2 Broccoli Heads
  2. 1/2 Cauliflower Head
  3. 1/2 Onion
  4. 1/4-1/2 Cup Zucchini
  5. 2 Egg
  6. 3/4 Cup Vegan Cheddar Cheese (I use Daiya since it is also soy free!)
  7. Seasonings to taste (I use S&P, cayenne, and italian seasoning)

Instructions

  1. Preheat oven to 350
  2. Add Broccoli, Cauliflower, Onion and Zucchini to food processor and chop until minced.
  3. Add Egg, Cheese and seasonings.
  4. Bake for 20-25 minutes.
