These are a great high protein snack on-the-go or can be served as a meal with salad or roasted veggies. The cilantro really gives the recipe a refreshing taste, so these are not dense like a meatball.

I am a fan of spice, so I typically eat these with a dollop of Sriracha, but it would be great paired with creamy cilantro yogurt dip as well 😉 Enjoy!

Cook Time: 10 minutes

Total Time: 20 minutes

Yield: 24 poppers

  1. 1 pound ground chicken
  2. 1 cup diced vegges (I used zucchini, carrot, yellow squash)
  3. 1/2 onion, diced
  4. 1-2 garlic cloves, minced
  5. 1/4-1/2 cup cilantro, diced
  6. Seasonings to taste: S&P, cayenne, Italian seasoning, cumin


  1. Combine all ingredients in bowl and mix well
  2. Mold into mini patties and cook 2-3 min on each side or until chicken is cooked through
  3. Serve with ketchup or Sriracha
