This Cilantro Vinaigrette is a nice alternative to the high fat dressings and adds just the right amount of tang to a delicate salad.

Use with sweet and buttery lettuces such as Boston and Bibb.



  1. 1/4 Cup Olive Oil
  2. 1/2 bunch Cilantro
  3. 1 clove Garlic, minced
  4. 2 Limes, juiced
  5. 3/4 tsp Mustard, spicy
  6. 2 Tbsp Red Wine Vinegar
  7. Salt, to taste


  1. Mix all ingredients in food processor and blend until smooth.
