I have tried it with vegan mayo and do not enjoy it as much. If you are doing a vegan version I recommend using a unsweetened coconut milk yogurt in place of the mayo.

Nutrition based upon using olive oil mayo, grapes and almonds

Ingredients

  1. 1 head of broccoli
  2. 4 pieces of bacon, cooked and crumbled
  3. 1/4-1/2 red onion, diced
  4. 1/4 cup dried cranberries or halved grapes
  5. 2 tbsp sunflower seeds, or sliced almonds nuts
  6. 4 tbsp mayo with olive oil or yogurt
  7. 2 tbsp, red wine vinegar (white vinegar will also work)
  8. 1 tbsp stevia in the raw

Instructions

  1. Combine mayo or yogurt, vinegar and stevia in bowl and refrigerate while you chop broccoli
  2. Combine all other ingredients in a large bowl and then pour mayo mixture over the top of broccoli mixture - stir evenly to coat
  3. Tastes great when served immediately. If you need to refrigerate it for later, you may want to prepare a bit more of the dressing to add in case it gets a little dry
