Are you a pizza lover?!? It is one of my guilty pleasures! Sunday night is our cheat meal, which typically consist of….I’ll admit it….pizza pie!! ? However, I am on a journey to figure out how to cure an auto immune disease which means cutting out gluten and diary completely (for a while at least). So thinking head about how I will control myself when ‘pizza night’ rolls around – let’s be honest, the struggle is real especially when there’s a hot, cheesy, gooey, warm pizza that was just delivered — ahhh.

I’ve been making quite a few new recipes with squash lately as they are in season. I honestly have to say, it is a toss-up between this pizza bake and the Butternut Squash Soup. Both are so good! But, luckily they are two different types of squash.So I picked up some fresh veggies this weekend at the farmers market, including some spicy hotttt peppers – the lady thought I was crazy for buying habaneros and then questioned me when I asked for the ghost peppers ?

Vegetables are most nutritious when they are the freshest, so my goal was to use them up early on in the week. . . which resulted in this spaghetti squash pizza bake. Seriously, we had the conversation of how we need to make it weekly when we finished it today for lunch. It. is. freaking. awesome!

Spaghetti Squash Pizza Bake

Yield: 8 Servings


  1. 1 large spaghetti squash (3-4 lbs)
  2. 1 pound italian sausage (or ground turkey for a lighter affair)
  3. 1-2 squash sliced, halved and roasted
  4. 2-3 cloves garlic, diced
  5. ½ yellow onion, diced
  6. 1 can pizza sauce (organic, no sugar added)
  7. 3 eggs, whisked
  8. 1 tablespoon fresh basil, chopped (can also use dry)
  9. optional: add other veggies such as bell peppers, more onion, jalepeno, habanero, or ghost pepper


  1. Prepare spaghetti squash, see how here. Then, place spaghetti threads in a 9x13 baking dish (sprayed with coconut oil or another healthy cooking spray).Preheat oven to 350 degrees.
  2. Brown sausage in medium skillet and dice.
  3. Dice onion and garlic along with any other vegetable you choose to add.
  4. Combine sausage, veggies, and pizza sauce together and stir.
  5. Pour sausage mixture over the spaghetti squash and mix well.
  6. Add whisked eggs and mix everything together until you can no longer see the eggs.
  7. Sprinkle fresh chopped basil and any other seasonings on top.
  8. Place in oven and bake for 1 hour or until the top of the mixture is brown and forms a slight crust.
  9. Let rest for 5 minutes before serving.
