These are my new fav! This recipe was heavily adopted by Betty Rocker; however, I didn’t have spelt flour or a gluten-free flour blend, so I used gluten-free oats ground into flour. If you’re a chocolate lover, you could easily add 1/4 cup mini dairy free chocolate chips to this recipe too!

Protein Apple Blueberry Muffins


  1. 1.5 cup oat flour, or another gluten free flour
  2. 1 package or scoop of vanilla protein (I used 1 packet of Vega sport protein)
  3. 2 tsp baking powder
  4. 1 tsp cinnamon
  5. 1 tsp salt
  6. 1/3 cup grass fed butter, melted
  7. 2 eggs
  8. 1/2 cup unsweetened coconut milk
  9. 3/4 apple, shredded
  10. 1 cup blueberries (I used a 6oz package and it was fine)
  11. Topping:
  12. 1/4 cup almonds or walnuts, crushed
  13. 1.5 tbsp coconut raw
  14. 1 tsp cinnamon


  1. Mix dry ingredients together in medium bowl
  2. Mix butter, coconut milk and egg together in small bowl
  3. Fold in Apple & Blueberries
  4. Spray tins with coconut oil or olive oil
  5. Divide between 12 muffin tins evenly
  6. Mix topping together and top each with a spoonful
  7. Bake at 400 for 15 minutes
  8. Gently slide them out onto a cooling rack.
