Soup is one of my favorite things about fall – there’s nothing better than a warm cup of soup on a chilly night! Plus, soups are great for meal prep as you can make a big pot of soup that can serve as several meals. As much as I cook, I’m not a huge fan of spending hours in the kitchen (I’d rather be sharing more info with you ;))

Many of these are nutrient dense and  very filling – without filling up on calories, fat, or carbs. Plus! many of them are quick and easy, toss in the crock pot and go! Depending on your household, you can cut the recipes in half or freeze leftovers.

Creamy Cauliflower Bisque

Craving potato soup? This is a skinnier version without all the carbs and resembles a cream of potato soup!

Light and healthy and dairy free!

 

Not Yo Mamas Chicken Noodle Soup

Double the protein, double the flavor, double the fun! I used Explore Asia Black Bean noodles, but you can also use Chickpea pasta – both are high in protein and in fiber (lower net carbs). If you prefer no meat, simply omit the chicken 😉

Roasted Acorn Squash and Leek Soup by SkinnyTaste

Roasted acorn squash with sauteed leeks topped with pepitas and chopped chives. Leeks are reminiscent of shallots but sweeter and more subtle, a perfect compliment to winter squash. If you like Potato Leek Soup, I think you will love this soup.

Black Bean Crockpot Soup

Everyone loves a good black bean soup, filled with fiber and protein you and add in (and hide) a variety of veggies and even spice it up for some kick!

Paleo Beef Stew by Parsnips and Pastries

A good hearty stew filled with veggies – I would use a white sweet potato in place of regular potato for added nutritional value.

This quickly became one of my fans favorites and a staple in the fall! 

 

Creamy Tomato Bisque

This is super quick and easy as I made the entire soup in about 20 minutes using a Vitamix to blend! You can use fresh tomatoes or canned, just make sure the coconut milk is firm as the cream is what makes this soup 😉

 

Easy Stuffed Pepper Soup by Skinny Taste

One of my favorite meals, in soup form! Leave the rice out completely for a low carb option, or add 1/4 cup to the top – I add Seeds of Change Brown Rice/Quinoa which is super easy!

I love mushrooms! But my hubby doesn’t, so I made a half batch and made him another type with the chicken…it was delish! I also used Tapioca Starch in place of the flour as that helps thicken the soup while providing natural probiotics.

CHILI

You can never go wrong with Chili, and its pretty hard to mess up 🙂 Here are a few variations, including anti inflammatory ‘chili’ without nightshades! Enjoy as a meal or top your favorite chicken sausage and make a healthier chili dog!
