Creamy Cilantro Dip

Ingredients

  1. 1/2 small onion, finely chopped
  2. 2 cups chopped fresh cilantro
  3. 1 1/2 cups unsweetened coconut milk yogurt
  4. 2 tablespoons chopped fresh mint
  5. 1/4 teaspoon ground coriander
  6. 2 tablespoons (or more) fresh lemon juice
  7. Kosher salt, freshly ground pepper

Instructions

  1. Mix all ingredients together and let set or 20-30 minutes
  2. Serve with your favorite veggies or dish
