One of my most famous recipes and super easy!

Chicken Avocado Soup garnished with Lime and Cilantro is a Mexican inspired soup. This soup can be tailored to your taste by adding more or less seasonings. If you like a protein packed soup, use 2 pounds of chicken.

This soup can be kept for 3-4 days in the fridge to enjoy throughout the week. If food prepping or doubling the batch, I would avoid adding in the cilantro and lime juice until just before serving. Enjoy!

Cilantro Lime Chicken Avocado Soup

Cook Time: 4 hours

Ingredients

  1. 1 tablespoon virgin coconut oil
  2. 3-4 garlic cloves, minced (I use 4)
  3. 1 medium yellow onion
  4. 1-2 pound(s) chicken breasts, boneless skinless (depending upon how much you want)
  5. 48 oz chicken broth (or more, depending upon your crock pot size)
  6. 1 tsp black pepper
  7. 1 tsp cumin
  8. 1 tsp salt
  9. 1 small bunch cilantro, chopped
  10. 1 lime juiced, plus 1 for garnish
  11. 2 avocados, cubed

Instructions

  1. Heat coconut oil in saucepan over medium heat. Add the onion and garlic, stirring frequently, until tender, 2-3 minutes.
  2. Next, lay chicken breast in bottom of crock pot and pour onion and garlic mix on top. Add chicken broth, cumin, salt, and pepper to the crock pot and turn on high.
  3. Let cook on high for 3-4 hours, or until chicken is cooked.
  4. Remove chicken and shred or (pull apart with fork while in crock pot). Add chicken back in, if necessary.
  5. Stir in ¾ of the chopped cilantro (save ¼ for garnish) and lime juice.
  6. Cube avocado and slice remainder of lime into wedges.
  7. Serve soup in a bowl, stir in the avocado, and garnish with the remaining cilantro and lime wedges. Enjoy!
